Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Brown beef: In a skillet over medium-high heat, add olive oil. Cook onions 3–4 min, then add garlic and ground beef. Cook until browned; drain excess fat.

  3. Season: Stir in diced tomatoes, Italian seasoning, paprika, salt, and pepper. Simmer 3–4 minutes.

  4. Layer: Place half the zucchini slices in the baking dish. Spoon half the beef mixture over top. Sprinkle half the cheddar and mozzarella. Repeat layers.

  5. Bake uncovered for 25–30 minutes, until zucchini is tender and cheese is bubbly and golden.
