Ingredients for Homestyle Italian Meatloaf

    • 1 kg (2.2 lbs) ground beef (80–85% lean)

    • ½ cup Italian-style breadcrumbs

    • ½ cup grated Parmesan cheese

    • 1 small onion, finely chopped

    • 3 garlic cloves, minced

    • 2 large eggs

    • ½ cup milk

    • ¼ cup fresh parsley, chopped (or 2 tsp dried)

    • 1 tbsp Worcestershire sauce

    • 1 tsp dried oregano

    • 1 tsp dried basil

    • 1 tsp salt

    • ½ tsp black pepper

  • Topping:

    • 1 cup marinara sauce

    • 2 tbsp tomato paste

    • 1 tbsp olive oil

    • 2 tbsp grated Parmesan (optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease or line a loaf pan or baking sheet with parchment paper.

  2. Mix topping: In a small bowl, combine marinara sauce, tomato paste, and olive oil. Set aside.

  3. Make meat mixture: In a large bowl, combine beef, breadcrumbs, Parmesan, onion, garlic, eggs, milk, parsley, Worcestershire sauce, oregano, basil, salt, and pepper. Mix gently with hands until just combined.

  4. Shape into a loaf in the pan or on a baking sheet.

  5. Spread topping generously over the surface. Sprinkle extra Parmesan if desired.

  6. Bake for 55–65 minutes, or until internal temperature reaches 71°C (160°F).

  7. Rest 10 minutes before slicing. Serve with extra warm marinara if desired.

Notes

  • Mix gently: Overmixing makes meatloaf dense.

  • Breadcrumbs options: Substitute with crushed crackers or oats.

  • Customize: Add chopped bell peppers or grated carrots for extra veggies.

Tips

  • Let the meatloaf rest so it slices cleanly.

  • Use a meat thermometer for perfect doneness.

  • For a crispier exterior, bake free-form on a baking tray.
